Here are a couple of simple recipes with Tomato, great for the summer season and great for a barbecue.
Tomato & Basil Salad
- One Punnet of Cherry Tomatoes rinsed and dried
- A good handful of fresh Basil (herb)
- A Pinch of Salt & Pepper
- A good Drizzle of Olive Oil
- A splash of Balsamic Vinegar
Simply half the cherry tomatoes and place in a bowl, tear up the fresh basil leaves and add them to the tomatoes, to the tomatoes and basil add a good drizzle of good quality olive oil then add the balsamic vinegar, salt and pepper. Stir it and place covered in the fridge for half an hour and then stir and serve.
The taste is so light and refreshing and is perfect for the summer with seasonal tomatoes. This salad goes great with a barbecue or as a side dish.
Tomato Salsa
- A couple of spring or salad onions
- 3 large tomatoes chopped into small bits
- Green Chillies ( about a half a teaspoon chopped finely, you can more if you prefer)
- Chopped clove of Garlic
- A good spoonful of Lemon Juice
- Some freshly cut and chopped Corriander
Simply mix all the ingredients together in a bowl. Cover it up and keep in fridge for an hour before use. Please be careful with the chillies, I sometimes use a latex glove when chopping.
Great for the bbq and on burgers. It is quite zingy.
Both recipes are suitable for all veggies.
