I have been asked what will I personally be having for my Christmas lunch, I have reviewed lots of products that would do the job perfectly, but I cannot have everything so I have chosen what I think we would enjoy most, so here goes.
We will be having the Granose Nutroast made with a little red wine (Coop Merlot) to enhance the flavour as the star of my meal.
I like the idea of the Redwoods Celebration roast but I already have the nut roast, so I will be copying the idea of wrapping Redwoods vegan bacon around the Redwoods Lincolnshire sausage to make rissoles.
We will be having some stuffing probably the paxo standard stuffing which is very easy to make and is vegan as far as I can tell.
For the vegetables we will be having Saffron roast potatoes which are heavenly. These are made by part boiling the potatoes with a pinch saffron and then roasting them in the oven brushed with some sunflower oil to crisp them up. Also will be having roasted parsnips done in the same tray brushed with some maple syrup. Parsnip and Carrot mash made using vitalite vegan margarine. Brussell Sprouts steamed, then after add a bit of vitalite and stir it through. We will be using the Bisto Onion gravy made with some lovely red wine ( Coop Merlot). Served with some cranberry sauce and a glass of Coop Sparkling Chardonnay.
For Dessert we will be having the Cooperative Christmas Pudding with some vegan Swedish Glace Ice Cream.
After all this I am going to sit in front of the telly until I can breathe again and then go for a lovely brisk walk along the sea front. Fabulous I cannot wait.
