I like quinoa and I often buy it in ready done salads or when I eat out, but until now I have never actually cooked it for myself. I have been missing out. Quinoa is so easy to make and is a vegan super food. Rich in omega oils 3, 6 and 9. It contains 8 essential amino acids and is a complete protein. Also contains minerals including Zinc, Iron, Magnesium and Phosphorus. The ancient Incas called it the Mother Grain because it is so nutritious.
You use it in a similar way to rice or cous cous. Firstly you give it a good rinse in cold water and then cook it for 10 minutes in water and a little salt. After it is cooked you can add whatever flavours you like as it is a good carrier, serve it hot or cold. I have had it with vinagarette dressings and salad, also with toasted nuts. For my first attempt I made a simple dish of toasted seeds with olive oil, salt and pepper stirred through the Quinoa which I cooked in water with a little vegetable stock. It tasted lovely. I made way too much as I followed the packet suggestions, but it does keep in the fridge, so I will be having it for a couple of days.
