Vegan Scone Recipe with Strawberry Jam
After being stuck in the house because of the bad weather, Paul decided to make some lovely light and fluffy vegan scones, and we topped them with some vitalite and some Streamline Strawberry Jam. Heaven with a pot of tea.
The jam is lovely, it has a very nice strawberry jam flavour but with a reduced sugar content. There is plenty of fruit in the jam and it tastes great. Perfect on these scones.
Each 400gram jar of jam is suitable for vegans and vegetarians. Per 100grams is 174kcal. 30% less sugar. Sold in supermarkets.
225g self raising flour
pinch salt
1/2 tsp baking powder
55g vegan margarine (eg vitalite), cubed
30g caster sugar
125ml vegan milk (eg soya or oat milk)
50g dried fruit (eg sultanas)
Preheat oven to 220c (200c fan)
Sift flour, salt and baking powder into a bowl
Rub in the butter until it resembles fine breadcrumbs
Stir in the sugar, then the dried fruit
Create a well in the centre, and add half the milk
Bring together and continue to add more milk until it forms a soft dough that is not too sticky
Very gently kneed the dough on a floured surface
Roll to 2.5cm / 1 inch
Cut into rounds with a cutter 7cm in diameter
Bake in the preheated oven for 12 minutes
Serve warm or cold.
Hi
Sorry, only just realised there was a response!
It’s the Seedless Raspberry Jam that is the issue (not normal raspberry jam), the Streamline site and Tesco both list it as containing Cochineal:
Hi Chris,
I have checked today 2nd april 2013 strawberry and raspberry flavours in the supermarket and they are labelled suitable for vegans and there is no cochineal in the ingredients list. So are OK for vegans.
I hope this helps
Maggie
Hi Chris, I will watch out for that, thank you for the heads up. It was not in this one when I reviewed it, but I will check others when I next go to a supermarket.
Take Care
Maggie
Its worth being very careful with Streamline Jam, they sometimes slip cochineal in
