I love pancakes, they are so easy to make vegan and you can add your favourite toppings. They are not something I have often but last year on my Birthday Paul made me some for my tea instead of a fancy meal and I loved it. Paul has just made a fresh batch, so I had these a day early to share Paul’s recipe and photos, I added maple syrup and banana to mine:-
Simple Vegan Pancake (crepe) recipe – makes 4
125ml milk substitute (soy, oat, almond etc)
125ml water
40g melted vegan margarine (eg vitalite)
1 tbsp sugar
1/4 tsp salt
1/4 tsp bicarbonate of soda
120g plain flour
Whisk together everything, except bicarb and flour, in a bowl
Add the flour and mix thoroughly
Chill for 30 minutes
Mix in bicarb while waiting for the pan to heat
Heat frying pan medium hot and pour pancake batter from a mixing jug or ladle to desired size,
Cook for approximately 2-3 minutes, flip and cook second side
Add your favourite toppings, like maple syrup, sliced banana, vegan ice cream, vegan cream, fresh fruit, golden syrup, a dash of lemon juice, just mix and match.
