Vegan Carrot & Coriander Falafel
A carrot and coriander flavoured falafel mix from the Simon Rimmer Meat Free Cuisine range of Symingtons.
This was really easy to make, you add the dry mix to cold water, give it a good stir, then leave for 10 minutes, shape into balls and lightly fry for a few minutes.
I love falafel and I don’t really like it messed around with, but I have to admit I found this one to be very tasty. The flavour had a really good balance of the background chickpea and cumin flavour with the carrot and coriander, it was spicy but not too hot. The texture was very good, it came out quite crumbly. Great in a pitta pocket with salad and humous. Very enjoyable.
Each 110gram mix is suitable for vegetarians and vegan as far as I can tell (see faq). Per serving of 5-6 falafel balls are 298kcal. Sold in supermarkets and health food shops.
