We tried Cassava for the first time today. We spotted it in the supermarket and wondered what to do with it. It is quite an enjoyable food. It is a starchy root that can be used instead of potatoes. We had our’s like chips.
Here is what we did:-
Peel, cut in half, and boil in salted water for 25 mins (the pieces may break into segments during the boiling)
Pat dry, then cut into fries, removing the tough central fibrous part
Deep fry in oil at 160c until dark, golden brown.
The outside of the fries will be crispy, with a floury, starchy texture on the inside – the taste is not dissimilar to floury potato.
I am not sure if it is worth the effort to make these again, also after a while they did get a bit sickly. Good to try new things though.
