Vegan Nut & Seed Bar9bar_peanut

A mixed seed energy bar with peanuts from 9bar.  Free from gluten and wheat.  I got this in the May Vegan Tuck Box.

The other 9 bars i have seen used to contain honey,  so I am glad there is now a vegan one.  The bar is solid with nuts and seeds,  it is a bit chewy.  There are sunflower, pumpkin, sesame, dehulled hemp, mixed seeds,  with peanuts.  It is stuck together with golden syrup, veg oil and raw cane sugar.  The bar is really nice and has a good balance of flavour.  Great for a snack.

Each 50gram bar is suitable for vegans and vegetarians.  Per bar is 288kcal.  I got mine in the Vegan Tuck Box,  but I am pretty sure they are also sold in health food shops.

Plantain

Plantain is an excellent alternative to potato based food.  It is rich in nutrients e.g.  fibre, vitamin A & C, vitamin B6 and potassium,

It took us a while to know how to cook it for the best,  so I thought I would share how we do it in our house.

For frying, these are best when they are very green.  Cut along the ribs of the plantain, then peel off the skin, section at a time.  Slice the plantain and fry in sunflower oil.

They are great with some salt & vinegar or with some ketchup.  We use them as an alternative to chips.

Very easy to cook,  you can use plantain in many ways including in curries.
