Plantain is an excellent alternative to potato based food. It is rich in nutrients e.g. fibre, vitamin A & C, vitamin B6 and potassium,
It took us a while to know how to cook it for the best, so I thought I would share how we do it in our house.
For frying, these are best when they are very green. Cut along the ribs of the plantain, then peel off the skin, section at a time. Slice the plantain and fry in sunflower oil.
They are great with some salt & vinegar or with some ketchup. We use them as an alternative to chips.
Very easy to cook, you can use plantain in many ways including in curries.
