Vegan Sweet Potato Chips Recipe
I really like sweet potato chips, whenever I have had them out I have really enjoyed the flavour and crispy texture. But when I have tried doing them at home I have struggled to get a crispy chips. Problem solved, Paul has been experimenting and has found a way of making the best sweet potato chips I have had, they are crispy, fluffy and full of flavour. Here is the recipe:-
Cut sweet potato into 1/4″ fries
Rinse with cold water to remove starch
Boil for 4 mins – place on a wire rack to cool enough to handle
Heat sunflower oil to 165c
Mix 1/2 cup cornflour with 1/2 cup water in a large bowl – mix to a milk like consistency
Coat fries in the mixture, deep fry in the sunflower oil for 2 mins (you may need to separate the fries as they cook)
Cool on wire rack – can do a second batch whilst these are cooling
Re-coat in the cornflour mix and re-fry for approximately 5 minutes until they have started to colour and are nice and crispy. Serve with some ketchup and a sprinkle of sea salt. Yum.
